In a heavy-bottomed dutch oven, cook bacon pieces over medium-low heat until fat is rendered and bacon is crispy.
Remove bacon from pan and let drain on a paper-towel covered plate.
Add onions to bacon grease in dutch oven. Cook for 1-2 minutes or until onions are just tender.
Add honey to onions and reduce heat to very low. Cover dutch oven and let caramelize, stirring occasionally for about 25-30 minutes, or until onions are very soft and very brown.
Meanwhile, spread pizza dough into a pizza pan and preheat oven to 475°.
When onions are finished, spread evenly over dough. Top with bacon pieces and crumble on goat cheese. Coat entire pizza in mozzarella.
Bake at 475° for 15-17 minutes or until crust is cooked and cheese is browned and bubbly.
