Step 1

Preheat your oven to 350

Step 2

In a medium sized pan, add 2 Tbsp. of olive oil and heat through.

Step 3

Then add your onions and stir continuously until they start to soften.

Step 4

Add the butter to the pan and continue to stir constantly to caramelize the onions and ensure the butter doesn't burn.

Step 5

Once done, set aside.

Step 6

Add the ricotta cheese to a large bowl.

Step 7

Then add in the onions, garlic, rosemary and kosher salt.

Step 8

Blend together with a hand mixer or fold everything in together with a spatula.

Step 9

Pour everything into an oven safe dish, add any additional salt and pepper at this time.

Step 10

Top with the Parmesan cheese and then bake for 20-30 minutes until the cheese has melted and the Ricotta Dip is warm.

Step 11

Top with parsley and then stir.

Step 12

Add in the last two Tbsp. of olive oil and then add additional parsley as desired.

Step 13

Serve with bread, garlic bread, crackers or chips immediately.
