Ingredients: 1 ounce white rum; 1 ounce aged rum; ½ ounce demerara syrup; 3 dashes tropical bitters, such as Mister Bitters Sweet & Sour

I love the awesome forwardness of a classic Old Fashioned. You can use different base spirits and amplify them with different bitters and flavors. With my Southern roots, I of course love making a bourbon Old Fashioned, but lately I have been experimenting with other spirits, like rum. What’s tricky with rum is some bottles can make the cocktail a bit sweet for my liking. Here, I use two types of rum —a white and dark — to balance the sweetness. Tropical bitters are phenomenal in tiki cocktails, but I thought they might also shine here. I love how you taste the light citrus notes alongside mango and passion fruit. It’s like a ticket straight to the Caribbean.

Caribbean Old Fashioned

white rum

aged rum

demerara syrup

tropical bitters,

Combine all ingredients in a mixing glass with ice.

Strain into a rocks glass over an ice sphere, or regular cubed ice.
