INSTRUCTIONS FOR THE CAKE: Step 1: In a big blender, blend half of all ingredients for the cake.

Step 2: Put the blended mixture in a big bowl and then blend the other half of the ingredients.

Step 3: Put the other half of the blended mixture in the same bowl and mix together with a whisk.

Step 4: Add the blended mixture in a greased and floured Bundt pan.

Step 5: Bake at 350º F / 175º C for 45 minutes or until golden brown. Insert a toothpick in the cake, if it comes out clean remove the cake from the oven.

Step 6: Carefully remove the cake from the pan. Run a soft spatula around the edges of the cake, then invert a serving plate on top of the pan. In one quick motion, flip the cake upside-down.

INSTRUCTIONS FOR THE ICING: Step 1: In a small-medium saucepan, put the coconut milk, sugar and grated coconut and stir.

Step 2: Bring to a boil and remove from the heat. Let it cool for 5 minutes and then pour over the cake.
