Step 1

Fry bacon in a large soup pot. When crispy, remove from the pot.

Step 2

Sautee onion in bacon drippings for 5 minutes.

Step 3

Add potato to the pot.

Step 4

Cover the potato with water (about an inch over the potatoes)

Step 5

Add the diced tomatoes & green chilies, tomato puree, and can of green chiles if using.

Step 6

Bring to a boil and boil for 10 minutes.

Step 7

Add fish filets to the pot and boil for 10 more minutes.

Step 8

Remove the filets to a bowl and shred with a fork or shred in the pot if they are falling apart.

Step 9

Add fish back to the soup.

Step 10

Crumble bacon and stir into the pot.

Step 11

Season with garlic powder, salt & pepper.

Step 12

Cover, turn heat to low and let simmer for at least 30 minutes.

Step 13

Serve with cornbread, crackers, or cheese biscuits.
