Step 1
Cut chicken breasts into 8 pieces.
Step 2
Place potatoes, onion, garlic, and carrots into a lined crock-pot.
Step 3
Season chicken with herbs de Provence, salt and pepper.
Step 4
In a large pan over medium-high heat, sear the chicken on all sides until a golden brown color is achieved.
Step 5
Place each browned piece of chicken into the lined crock-pot.
Step 6
Once all the chicken has been thoroughly browned add in the halved mushrooms. Cook 5 minutes stirring frequently or until mushrooms have browned.
Step 7
Pour the champagne into the hot pan with the mushrooms.
Step 8
Let it simmer for 2 minutes then remove from heat and pour into the lined crock-pot on top of the chicken.
Step 9
Cover and cook on low until chicken is fork tender.
