Step 1

Preheat oven to 350 F. Spray an 13x9 inch pan with cooking spray.

Step 2

In a large skillet, season the onion with cooking spray and salt and pepper. Cook until slightly brown.

Microwave cauliflower rice as instructed. If you decided to use fresh cauliflower, go ahead and cook to liking.(Optional step: transfer the cauliflower rice to the skillet and mix with the onion for 5 or so minutes, to give it a "smokier" taste.)

Step 4

Once cooked, layer the cauliflower rice mixed with the onions at the bottom of the baking pan.

Step 5

In the same skillet, cook the ground beef with salt and pepper to taste. When the beef is cooked throughly, add the taco seasoning and stir completely until the beef is evenly coated. Then, layer the beef on top of the cauliflower and onion layer.

Step 6

In a medium sized bowl, add the cream cheese and sour cream. Use a hand mixer to cream the two completely. Once combined, add in the diced tomatoes and fold into cream cheese mixture with a spoon.

Step 7

Add this layer on top of the beef and spread across the pan evenly.

Step 8

Top with cheese then place in the oven for 10 minutes, or until the cheese is melted. When done, take out, let cool, and enjoy!
