Step 1
Heat the oven to 200C/180C fan.
Step 2
Peel the potatoes and cut them into long chips, keeping them a uniform thickness as far as possible.
Step 3
Place them into a large saucepan, add the sea salt and cover with cold water.
Step 4
Bring to the boil, then turn down the heat and simmer for 4-5 minutes.
Step 5
When the chips are part-cooked but still firm, drain them through a colander, then place the colander on top of the hot saucepan to steam off the remaining water.
Step 6
Add the oil and celery salt to the saucepan and toss the chips in the seasoned oil. Ensure they are all well coated.
Step 7
Spread the chips on a large non-stick baking tray in a single layer. Use two trays if necessary.
Step 8
Bake the chips for about 30 minutes, turning them after 15 minutes.
Step 9
When the chips are almost ready, scatter the grated cheese over them and return to the oven for about 5 minutes for the cheese to melt.
Step 10
Grind a little fresh black pepper over the hot chips and serve immediately, with a little more grated cheese if you like.
Step 11
Serve immediately with your favourite veggie sausages or burgers.
