Step 1
Preheat oven to 350 degrees F.
Step 2
In a large bowl, combine the cooked rice, green chilies, 1 1/2 cups shredded cheese, sour cream, garlic powder, salt and pepper. Stir until well combined.
Step 3
Spray a 9 by 13" baking dish with non-stick cooking spray, then spread the rice mixture in the baking dish and sprinkle with the remaining 1/2 cup of cheese.
Step 4
Bake for about 20 minutes, or until the mixture is bubbly and the cheese is lightly golden brown.
Step 5
Remove from the oven and let cool for about 10 minutes, then garnish with chopped parsley or cilantro before serving. Enjoy!
