Step 1

Combine 1/2 cup Panko crumbs, 1/4-1/3 cup grated parmesan cheese, and 1 tbsp butter together in a bowl. Stir until the butter coats the crumbs evenly. Set aside.

Step 2

Thoroughly wash the parsley under running water and use a paper towel to dry the leaves. Cut off the stems, then finely chop the leaves. Set aside.

Step 3

Rinse Salmon fillet under running water and pat dry with a paper towel. Cut into 1-inch cubes.

Step 4

Stir the spices together.

Step 5

Add spices, parsley, pressed garlic, mayonnaise, and 1/2 the cheese to the salmon cubes. Stir to distribute the ingredients evenly.

Step 6

Preheat oven to 425°F with the baking rack in the middle.

Step 7

Transfer the mixture to an ovenproof baking dish (I used a 9’’x6’’) and flatten the salmon mixture. Sprinkle the top evenly with cheese, then breadcrumb mixture.

Step 8

Allow to bake for 5-7 minutes uncovered, then once the breadcrumbs are golden in color loosely cover with foil and bake for another 9-10 minutes or until the salmon is baked through in the middle of the dish. Remove from the oven and serve with steamed vegetables or a side dish of choice.
