Step 1
Place a vegetable steamer basket into a large pot and fill with water until it barely reaches the bottom of the basket. Bring water to a boil.
Step 2
Cut one head of cauliflower into small florets.
Step 3
Once the water is boiling, add the cauliflower and cover. Allow to steam until tender, about 15 minutes.
Step 4
Preheat oven to 350 degrees.
Step 5
Once the cauliflower is steamed, mash with a potato masher and strain out any excess liquid.
Step 6
Add in 1/2 C sour cream, 1/2 C of the shredded cheddar cheese, 1 tsp dry ranch mix, 1/2 tsp garlic powder and 1/2 tsp onion powder. Mix together.
Step 7
Pour into an oven-safe dish and top evenly with 1 Tbsp of butter cut into small pieces and remaining 1/4 C of cheddar cheese.
Step 8
Bake for 30-45 minutes, or until bubbling. Garnish with parsley.
