Cheesy Spaghetti Pie

spaghetti, cooled

Parmesan

pecorino

Swiss

eggs

Salt and black pepper

olive oil

American cheese

Mix the cooled spaghetti, grated cheeses and eggs together in a large bowl. Sprinkle with salt and pepper. Add the oil to a large nonstick saute pan and heat to medium heat. Once hot, add a handful of the spaghetti mixture to the pan and flatten it out to the edges. Lay the American cheese on top and add another layer of the spaghetti mixture. Cook for about 5 minutes and flip, cooking for another 5 minutes on the other side until golden brown. 

Turn out onto a cutting board, slice as you would a pizza and serve.

I first saw this as an Alton Brown recipe - where’d he go?  Anyways, the recipe as is is a 3, but with minor changes could be a five, so I have it a 4.<br />This is like a basic cheese omelette.  Ok, but boring. So add something!!  Bacon, ham, red pepper flakes, crab, onions, green peppers, jalapeños, chorizo, beans, use blue cheese or Stilton instead of Swiss, etc.  I used ham, added red pepper and sautéed onions.  <br />Also I halved the recipe and used ramen noodles since they’re quick (throw out the salt (oops, I mean spice) packet<br />Delicious!! 

Really tried to like this. Was kinda like an omelet with spaghetti in it making it more bland. The only thing that saved it was the American cheese in the middle. Best I can say about it was that it was fun to make. I love flipping things over.

just watched this episode--Marc cooked a full pound of pasta but used only 'about half' in the spaghetti pie--no wonder it was bland! I'm going to try it again and I'm sure it will be great!

This was really good.  I did make a few changes after reading reviews.  To give it more flavor I used shredded pepper jack and added fresh herbs (sage, basil and chives) to the egg mix along with some minced garlic.  I was skeptical about adding the american cheese in the middle but did.  I turned out really good!  I had to cook more than 5 minutes to get it browned on both sides but it was easy to slide out of the pan and flip.  My husband loved it and wants me to make sure there is always left over pasta.

It was simple to make, but I didn't think it was all that cheesy. I want to make again adding a lot more cheese. I added ham to it and I think it saved the taste. I haven't given up all together on this dish but wish it was as satisfying as I had expected.

This dish is pure comfort food.  As Mark said on the episode, it's similar to a grilled cheese with the crisp exterior and gooey creamy middle. As a mom, I made a similar version of this for my children for years, baked in the oven, but it lacked the great texture of Mark's pie.  For those who want more flavor than the cheese alone, consider serving topped with a big spoonful of marinara sauce.  Delicious.

I can't give this 5 stars because after reading many of the reviews, I changed the recipe to suit myself, so I don't know if Marc's dish is worth 5 stars.  Mine was!  I didn't have all the cheeses on hand that he used so I used Gryere, Picarino Romano, Colby Jack and Jalapeno Am in the middle.  I used my 10" Green Pan, you know, the one that's plastered all over the TV for not sticking.  everything slides right out and this cheesy dish did too.  I added a little pepperoni and a finely diced slice of yellow onion.  Added about 3/4 of a cup of each cheese (I love cheese) and, oh yes, I didn't have much spaghetti on hand so I used what I had and added some Fettuccini to make up the difference and lots of salt and pepper.  I let mine fry for about 10 min or so until I could see the bottom turning golden brown.  Then did like Marc did with a plate and flipped it out.  (My Green Pan made that a breeze) Fried the other side and it was wonderful.  Crunchy on the outside, gooey on the inside!

Made this for my Daughter  who is 30 and she loved it, I thought it could be seasoned better for more flavor, easy enough next time I make it.

Loved the cheesy flavor mixed with crispy pasta.  I can understand the "bland" comments.  But it's definitely cheesy.  Pretty kid friendly too.

Thanks to all who left comments regarding spicing this recipe up a bit. I used parmesan and pepper jack as well as some leftovers from a cheese platter: smoked cheddar, camembert &amp; herbed brie (the last 2 in the middle rather than American, which we never buy/eat). I was careful not to cook it too long on each side (light brown and crispy but not too dark), and also worked the edges with a heat-proof rubber spatula to aid in flipping. Recommend the jazzed-up version! ;)
