Remove and let cool until able to handle. Meanwhile, prepare stuffing: In a large bowl, mix together Panko, mozzarella, Parmesan, parsley, olive oil, and garlic. Season with salt and pepper. Pack bread crumb mixture into the artichoke leaves. Place artichokes in a baking dish, sprinkle with more mozzarella, and bake until cheese is melted and bread crumbs are golden, about 5 minutes. Serve with marinara.
