Step 1
Cook the gnocchi according to package directions. Preheat the oven to 350 degrees.
Step 2
Melt the butter in a skillet over medium high heat. Cook the proscuitto until it's browned and crispy. Drain the proscuitto and set it aside.
Step 3
Add the tomatoes and garlic to the same skillet. Add in the salt, pepper, and chili flakes. Cook for a few minutes until the tomatoes begin to soften.
Step 4
Add in the spinach and cook and stir until the spinach is wilted.
Step 5
Stir in the chicken stock, heavy cream, Parmesan, parsley and basil. Cook for a few minutes to reduce the sauce.
Step 6
Add the gnocchi and proscuitto to the tomatoes and sauce. Put the mixture into a casserole pan. Top with the mozzarella.
Step 7
Cook the gnocchi in the oven for about 25 -30 minutes or until heated through and the cheese on top is melted and slightly browned.
