Step 1

Preheat oven to 350 degrees F. Coat a 2-quart baking dish (see Note), with cooking spray.

Step 2

In a large bowl, combine flour, granulated sugar, and salt; make a well. Add eggs, milk, vanilla, and lemon juice. With an electric mixer, blend until batter is smooth. Pour batter into baking dish and top with cherries.

Step 3

Bake 45 to 50 minutes or until golden brown and center is set.

Step 4

Sprinkle with confectioners' sugar, cut into wedges, and serve hot.
