Step 1

Beat the eggs with the brown sugar, milk, cream, seeds from the vanilla bean pod, and a pinch of salt; then add in the flour, sifted together with a teaspoon of baking powder, and mix carefully so no lumps form.

Step 2

Cut the cherries in half and remove the pits; add a tablespoon of butter to an oven-safe 8 1/2-inch skillet and cook until it begins to sizzle; add in the cherries and cook for 2-3 minutes, then add in the batter and bake at 350°F for 20-25 minutes.

Step 3

If your skillet is not oven-safe, place the cherries in a baking dish, then pour the batter over top and bake. Serve the clafoutis warm, topping with fresh cherries to taste and whipped cream (whip 3/4 cup of cream with a tablespoon of powdered sugar).
