Step 1
Preheat the oven to 350 degrees F. and line a baking sheet with parchment paper or silicone baking mat; set aside.
Step 2
Scoop the 1 C. cherry pie filling out onto a cutting board and chop it up a bit smaller.
Step 3
Roll out the crusts and use a 3" round cutter to cut 12 cookie bottoms out.
Step 4
Transfer each to the prepared cookie sheet.
Step 5
Top each with about 1 Tbsp. of the cherry pie filling.
Step 6
Cut the other pie crust into 1/2" strips and create your lattice.
Step 7
Use the same 3" cookie cutter to cut out the lattice tops for each cookie.
Step 8
Place the lattice piece over the cherry pie filling and seal the edges as you would a pie.
Step 9
Brush the tops of each with the egg and sprinkle with sugar.
Step 10
Place in the oven to bake for 20-25 minutes or until golden brown.
Step 11
Once done, remove from the oven and allow to cool completely.
