Step 1
Preheat oven to 180°C and line a 20x30cm baking tin with baking paper.
Step 2
Mix all the dry ingredients together in a bowl.
Step 3
Mash together the cherries, maple syrup, coconut oil and vanilla in a small bowl. Use a stick blender to blitz everything until you have just a few chunky pieces of cherry remaining and the rest of the mixture is smooth.
Step 4
Add the cherry mixture to the dry ingredients and mix until everything is well combined.
Step 5
Press the mixture in to your prepared baking tin with wet hands. (Be sure to press the mixture in firmly as this will help to hold the bars together once cooked.)
Step 6
Bake for 35-40 minutes until the edges are just starting to turn golden.
Step 7
Allow the bars to cool in the tin completely before cutting in to bars (they’ll break apart if you try and cut them whilst still warm).
Step 8
Spread the bars out on a cooling rack and drizzle each bar with the melted dark chocolate.
Step 9
Pop in the fridge to set.
