To a large mixing bowl, add the applesauce, coconut oil and vanilla extract. Stir to combine. Add the almond flour, oats, coconut sugar, cinnamon, baking powder, baking soda and salt. Mix until well combined. Fold in the pistachios and dried cranberries.
Step 3
Scoop the batter onto a parchment-lined baking sheet to make 12 cookies. Flatten the tops slightly with a spoon. Bake for 12 minutes, or until golden brown. Remove from the oven and allow to cool slightly to firm, before serving.
