Chewy Honey Granola Bars

oats

puffed wheat cereal

all-purpose flour

walnuts

raisins

chocolate chips

baking soda

cinnamon

honey

butter, melted

vanilla extract

Preheat oven to 350°. In a large bowl, combine the first 8 ingredients. In a small bowl, combine honey, butter and vanilla; pour over oat mixture and mix well. (Mixture will be sticky.)

Press into a 13x9-in. baking pan coated with cooking spray. Bake until set and edges are lightly browned, 14-18 minutes. Cool on a wire rack. Cut into bars.

My husband won't eat store bought anymore. I switch out Ing. sometimes and add Blueberries or cherries! He takes one to work every day so I like to mix it up. But stick with the basic recipe, Thanks for a great recipe.

Puffed wheat rice (a whole grain)  is made by arrowhead mills and can be found at Big lots, whole foods, trader joes.

Loved the flavor and the lower calorie version of granola bars, but mine didn't stay in the bar form very well. I actually ended up putting chunks of the granola in a bowl and poured some almond milk over it and it was super yummy.Also, adaly, you can find puffed wheat in the cereal section of most grocery stores. I just bought a bag for $1 at Walmart and I know Malt-o-Meal makes it in a bagged cereal too. It's usually very inexpensive.

Excellent. I changed the raisins to cranberries and the walnuts to almonds. Next time I think I'll try pistachios. They were gone SO fast. If you have trouble with them being crumbly, just pat them down with a glass bottom the same way you do rice krispie treats before baking them. It worked great!

Mine tasted OK, but were more crumbly than chewy; maybe I should have soaked the raisins first.

Great flavour.  Would definitely make again.  A good tip: Grease your spoon or your hands if you are using them, when pressing the mix in the pan.  It is very sticky and the margarine helps with this.

When I first made this dish, was sorely disappointed.  First of all, could not find puffed wheat cereal — anywhere.   The bars themselves, after cooling, were very flaky and literally fell apart.  They tasted good — just were very clumsy to eat and not very user-friendly.  Decided to freeze the leftover bars for later use.  Amazing!  They froze incredibly well, and the structure was a little more cohesive.  After having written them off my “keeper” list, I have reinstated this as a go-to snack to have on hand.
