Preheat oven to 190°C (170°C fan) mark

Heat 1tbsp oil in a large pan and gently fry leeks for 15min until completely softened. Stir in Boursin and 100ml (3½fl oz) water. Check seasoning. Empty into an ovenproof serving dish – about 1.5 litres (2¾ pint).
