Heat all ingredients except leeks to boiling. Reduce heat. Cover and simmer 30 minutes. Add leeks. Heat to boiling, reduce heat and cover. Simmer until chicken is cooked. Remove chicken from broth and cool. Remove skin and bones. Cut chicken into pieces and set aside. Remove bay leaf. Add the chicken to the broth. Heat for about 5 minutes or until hot and serve or store in the refrigerator until ready to serve.
