Step 1

Preheat oven to 200°C/180°C fan-forced. Place chicken in a large baking dish. Add eschalots, garlic, tomato and stock. Season with salt and pepper.

Step 2

Cook for 30 minutes. Turn chicken. Cook for 30 minutes. Add olives and oregano. Cook for 15 to 20 minutes or until chicken is tender and sauce has thickened.

Step 3

Serve chicken with pasta and beans.
