Step 1
Mix all of the ingredients for the pickled red onions in a glass bowl. Taste for salt, cover and set aside until ready to serve.
Step 2
In a large skillet over medium heat, combine the sauce of your choice with 3 cups of cooked chicken. Heat just enough to warm through. Fold in the chips and coat evenly without breaking up the chips too much.
Step 3
Serve them as-is with your favorite toppings or you can add the crema and cheese and bake in a preheated 400-degree oven for just a few minutes, or until the cheese melts.
Step 4
I prefer to serve them right out of the skillet and top with crema, crumbled Mexican cheese, pickled red onions and cilantro.
