Step 1
Remove meat from chicken. Discard skin and bones. Shred chicken. Place in a bowl.

Cook noodles following packet directions. Drain. Refresh under cold water. Drain well.

Heat a wok over high heat. Add oil and swirl to coat. When hot, add cauliflower. Stir-fry for 2 minutes. Add green onions and capsicum. Stir-fry for 1 minute. Add 1/4 cups stock, cabbage and beans. Bring to the boil. Cook for 2 minutes. Add noodles and chicken.
Step 4
Combine remaining 1/4 cup stock, sugar, soy, vinegar and cornflour in a jug. Stir into chow mein. Bring to the boil. Cook for 1 minute or until sauce thickens. Serve.
