Chicken Cornbread Casserole

large onion, chopped (about 2 cups)

celery ribs, chopped (about 2 cups)

chicken

(10-3/4 ounces) condensed cream of chicken soup, undiluted

(10-3/4 ounces) condensed cream of mushroom soup, undiluted

chicken broth

poultry seasoning

salt

sage

pepper

Preheat oven to 350&deg;. Place bread cubes on an ungreased 15x10x1-in. baking pan. Bake 20-25 minutes or until toasted. Cool on baking pan.

In a large skillet, heat butter over medium-high heat. Add onion and celery; cook and stir 6-8 minutes or until tender. Transfer to a greased 4-qt. slow cooker. Stir in cornbread, chicken, soups, broth and seasonings.

Cook, covered, on low 3-4 hours or until heated through.

I made this today for dinner. I didn’t add the sage because I don’t care for it. I didn’t have time to put it in the crock pot after making the cornbread and then baking the cut up cornbread. So I baked it at 425 for 35-40 minutes. It was delicious. My hubby added syrup on top to his because he said that’s how he like his cornbread. It was really good like that! Will definitely make again and again.

Looks delicious. What do you suggest to use for the cornbread? Store bought or homemade? Sweet or Savory?

Made it for the first time tonight. Family loved it. Definitely a keeper. Only had 1 cup of celery so also added one cup of yellow bell peppers.

to pdjones:  yes, you can add veggies!  I precooked until almost tender:  onions, shredded carrots, diced red bell pepper, celery, quartered and sliced zucchini.  Family loved it!!

Good recipe. I've tried this in the crockpot to cook for Sunday lunch after church, but if we're hungry for this dish during the week, I cook it in the oven, covered, at 375 for about 45-50 minutes. Someone in a previous comment asked about more veggies, I've been known to peel and dice a couple of carrots to add to the veggie mix. It didn't seem to dry it out any. I've also substituted cream of celery soup if I'm out of cream of mushroom. Good solid recipe as it's written or with some simple change ups.

This was absolutely delicious.  All three of us loved it.  I used a slightly sweet cornbread but I think it would be good with a more savory recipe too.

A simple, tasty and delicious meal.  My whole family loved it.  I only made one change. I used 2 cans of cream of chicken soup( 2 family members don't like mushrooms.....gasp).

Could you had a few more vegetables without it getting too dry?
