Preheat oven to 350F. Dice chicken into bite size pieces. Combine the chicken, 1 cup of cheese, sour cream, chili powder, ground red pepper and salt in a large bowl.Spread about a 1/4 cup of the chicken mixture on each tortilla and fold it up tight. Pour 1/2 cup enchilada sauce on the bottom of a baking dish.Place tortillas in the baking dish, seams down. Top with remaining sauce and cheese. Bake for 20 minutes. Top with olives and scallions.
