Step 1

In a large bowl combine chicken, the juice and zest of one lime, chilli, garlic, onion powder, paprika, coriander and a drizzle of oil. Season with salt and pepper and stir well to combine. Cover and set aside in the fridge to marinate for at least 1 hour or overnight.

Step 2

Preheat your BBQ or a large grill pan to medium-high heat and brush with oil.

Step 3

Thread the chicken onto soaked skewers.

Step 4

Grill the skewers for 3-4 minutes on each side or until browned and cooked through.

Step 5

Cut the remaining lime into wedges. Garnish the skewers with extra fresh coriander, then serve with lime wedges.
