Step 1
Cook potatoes in a saucepan of salted boiling water for 5-8 minutes or until tender. Add spinach and cook for 2 minutes. Drain. Return to pan with milk and dairy spread. Use a masher or fork to mash until smooth. Season with salt and pepper.
Step 2
Meanwhile, use a sharp knife to cut into the side of each chicken breast to create a pocket. Cut cheese into four slices. Place a slice in each chicken pocket and secure with a toothpick.
Step 3
Place egg mixture and breadcrumbs in separate bowls. Dip chicken in egg, then breadcrumbs, pressing firmly to coat.
Step 4
Heat oil in a frying pan over medium-high heat. Add chicken and cook for 4 minutes each side or until golden brown and cooked through. Remove toothpicks. Serve with spinach mash.
