Heat the oil in a large pan over medium high heat. Add the chicken and season with salt and pepper to taste.

Cook the chicken for 5-6 minutes per side, until mostly cooked through.

Once fully cooked, let rest for 5 minutes and then shred.

Add chicken back to the pan and add garlic and ginger and cook for 1 more minute.
