Step 1

Preheat oven to 200°C. Place potato, red onion, capsicum and half the oil in a large bowl and toss to combine. Transfer to a large baking tray.

Step 2

Combine marmalade, soy sauce and mustard in a large bowl. Add chicken and toss to combine. Transfer chicken mixture to the tray and top with orange. Drizzle with remaining oil and any remaining marmalade mixture.

Step 3

Bake, basting with pan juices every 15 mins, for 1 hour or until chicken is golden and cooked through. Sprinkle with spring onion to serve.
