Step 1

Preheat oven to 220°C.

Step 2

Remove the bones from the chicken and discard skin. Cut the meat into 1cm pieces.

Step 3

Place the Lebanese bread on 2 large pizza or baking trays. Spread the pizza sauce evenly over the bread and sprinkle each with 1/4 of the mozzarella. Scatter the chicken over the mozzarella and then sprinkle with the green shallots.

Step 4

Place the remaining mozzarella in a small bowl. Add the coriander, chillies, garlic, salt and pepper, and mix well. Sprinkle evenly over the pizzas.

Step 5

Bake the pizzas in preheated oven, swapping the trays halfway through cooking, for 14 minutes or until golden. Serve immediately.
