Step 1
Heat oil in a large saucepan over medium heat. Add vegetables and cook, stirring often, for 8-10 mins or until vegetables start to soften.
Step 2
Add stock and water. Cover and bring to a simmer. Simmer, partially covered, for 15 mins. Add chicken and cook over low heat for 10-15 mins or until just cooked. Remove from pan. Set aside to cool. Use your fingers to shred chicken.
Step 3
Return soup to a simmer. Add noodles and cook, uncovered, for 2 mins or until cooked. Stir in chicken and parsley. Season and serve.
