Step 1
In a bowl, combine the ingredients for the chicken parm patties and mix well, forming 6 equal rectangular-shaped patties.
Step 2
Set up a breading station with one bowl containing egg and buttermilk, and another with Parmesan and panko. Bread the patties by coating them in egg mixture followed by the panko mixture.
Step 3
Preheat your griddle to approximately 350 degrees and add the frying oil.
Step 4
Cook the chicken patties for 2-3 minutes on each side.
Step 5
Place an aluminum pan on the griddle and add the marinara sauce.
Step 6
Once the chicken patties reach an internal temperature of about 165 degrees, toast the sub rolls on the cut side.
Step 7
Build the sandwich by placing ¼ cup of marinara on each chicken patty, followed by slices of mozzarella cheese. Cover with a dome for 1 minute, then remove and assemble the chicken on the rolls. Top with additional marinara.
