Heat a clean frying pan - high heat

Add cumin seeds and coriander seeds to the frying pan

Toast in frying pan until fragrant

Add sea salt, garlic clove, red onion, fresh chili, chorizo, ground chicken and red bell pepper to the frying pan

Fry in frying pan until just cooked while stirring occasionally - low heat

Transfer content of frying pan to medium bowl

Add ear of corn to a clean baking sheet

Grill in broiler until browned and let cool

Once cool, slice kernels off and set aside.

Pre-heat frying pan - medium heat

Add flour tortilla and cheddar cheese to a clean work surface

Crush feta cheese the tortillas

Add parmesan cheese to the tortillas

Drizzle with extra virgin olive oil

Transfer tortillas to frying pan

Cook one by one in frying pan - approx 3 min

Slice into quarters

Add avocado, lime and salt & pepper to a clean small bowl

Mash until combined
