Step 1

Preheat oven to 350F.

Step 2

In a large saucepan, melt the butter over medium heat.

Step 3

Saute the onion and celery until softened.

Step 4

Add the garlic, and cook a further 30 seconds.

Step 5

Sprinkle flour over the top and mix well.

Step 6

Whisk in the stock and milk and cook until thickened.

Step 7

Season to taste with salt/pepper.

Step 8

Add the rice, chicken and 1/2 cup cheddar and bacon (keep some for sprinkling) and mix until well combined.

Step 9

Top with remaining cheddar and bake until the cheese melts and browns (about 15 minutes)

Step 10

Garnish with scallions and extra bacon.

Step 11

Devour.
