Ingredients: 1 shredded cooked skinless, boneless chicken breast; 1 hard-boiled egg, chopped; 1 tablespoon reduced-fat ranch dressing; 1 ½ tablespoons reduced-fat mayonnaise; 1 teaspoon paprika; salt and ground black pepper to taste

My fiance loves chicken salad, but it's not for me, so i always end up throwing out extra servings that other recipes make. So, I made a single serving one day and am sharing my recipe so you don't have to waste extra servings either! If you like your chicken salad crunchy, add some cashews! Serve as a sandwich or on top of lettuce!

Chicken Salad for One

chicken breast

egg,

ranch dressing

mayonnaise

paprika

salt and black pepper

Combine chicken, egg, ranch dressing, mayonnaise, paprika, salt, and pepper in a small bowl. Serve.


This was fantastic! The only issue I had was the amount of paprika. 1 teaspoon would be way too much, so I only used 1/2 teaspoon and that was perfect.  I loved the addition of the egg.  I know this is for one serving, but I really wish I would have doubled the recipe so I had leftovers. This made the perfect lunch.
