Preheat oven at 350°F (175°C)

Butterfly the chicken breast and pound it with a millet or a heavy object to even the surface. You want it to be approximately half an inch thick.
Step 3
Sprinkle with salt and pepper and cook it in a skillet in medium/high heat with a tablespoon of olive oil. Wait until one side has browned well (about 5-6 minutes) and then flip it. Cook the other side the same way.
Step 4
Put it in the oven to bake for additional 10 minutes and let it rest in a cutting board. Divide in two equal pieces.
Step 5
Lay some spinach leaves on one slice of bread. Put one piece of chicken on top and drizzle with some sauce.
Step 6
Lay some tomato slices on top, some basil leaves and drizzle again with some sauce.
Step 7
Top with another slice of bread.
Step 8
Repeat for the second sandwich.
Step 9
Eat.
