Preheat your oven to 180°C/ 350°F (fan-forced).

Place the chicken, sweet potato and onion wedges onto a baking tray.

In a blender or food processor, chop your ginger, garlic and coriander stems (reserving the leaves to garnish). Thermomix 5 seconds, speed 6.
Step 4
Add the rest of the sauce ingredients and blend until combined. Thermomix 10 seconds, speed 7.
Step 5
Pour into the tray covering the chicken and vegetables. Bake for 20 minutes then add in the broccoli. Bake for another 20-30 minutes or until the chicken is cooked through.
Step 6
Once cooked, squeeze over the lime and scatter over the coriander leaves.
Step 7
With rice, quinoa or cauliflower rice.
Step 8
You can make just the sauce and freeze it to throw together quickly when you fancy this delicious meal.
Step 9
Or make completely and re-heat (covered) in a low oven until just hot.
Step 10
Store in an airtight container in the fridge or freezer.
