Step 1
Prepare chicken if not using chicken tenders. To prepare, slice chicken breasts in 1/2-inch strips (cut across the grain).
Step 2
In a large mixing bowl mix together the brown sugar, salt, pepper, chile powder, garlic powder, chipotle chili and adobo sauce.
Step 3
Pour sauce over chicken and mix to ensure all pieces are layered with the sauce. Cover and place in the refrigerator for a minimum of 30 minutes and up to 24 hours.
Step 4
Thread each chicken piece with a wooden skewer.
Step 5
Lightly coat the baking rack with cooking spray. Place each chicken skewer on the rack.
Step 6
Adjust the oven rack to the upper middle. Place prepared chicken skewers in a preheated oven at 375°F.
Step 7
Bake for 10 minutes, then flip skewers over and bake an additional 5 minutes or until chicken reaches 165°F internal temperature. Broil for 1-2 minutes on each side if desired.
Step 8
Serve with a dipping sauce or side dish.
