This hearty chowder would be easy to serve for a football watch party or tailgate.

Chicken, Sweet Potato, and Corn Slow-Cooker Chowder Recipe

chicken broth

sweet potatoes, peeled and cut into ¼-inch pieces (about 4 ½ cups)

chicken breasts

corn kernels (from 4 ears)

yellow onion (from 2 onions)

red bell pepper (from 1 large bell pepper)

yellow bell pepper (from 1 large bell pepper)

celery (from 3 stalks)

salt

black pepper

heavy cream

cornstarch

¼ cup chopped fresh flat-leaf parsley

Hot sauce

chives

Combine the first 10 ingredients in a 6-quart slow cooker. Cover and cook on HIGH until chicken and sweet potatoes are tender, about 4 hours. Remove chicken from slow cooker. Coarsely shred, discarding bones; set aside.


Whisk together cream and cornstarch in a bowl until smooth; stir into soup. Cover and cook until slightly thickened, about 30 minutes. Stir in chicken and parsley. Top with hot sauce and chives.


My entire family enjoyed this soup. Did blend about half of the soup and added it back to the crockpot the last half hour, following a previous reviewer’s advice. Chicken and vegetables were tender. The soup had great flavor.

This recipe is excellent!  I halved it because there's just 2 of us and it still made plenty for several meals.  It was just so tasty...flavorful...I used less black pepper due to personal preference and used half and half instead of heavy cream because that's what I had on hand as well as a left over rotisserie chicken breast.  Nothing else was changedOver the years I have never been disappointed in Southern Living recipes and I have the library of their Annual recipe books starting in 1980.  With Thanksgiving coming up, I still made a family preference of their Sweet Potato casserole (on pg 26 of that book) with the flour, brown sugar, pecans and butter topping.

2 changes I would make to this fantastic dish:1. use chicken bone broth instead of just chicken broth.2. take about half the soup at about 30 mins left in the cook and put it into a blender.This is what I did and it made it amazing.
