Step 1

Chop first 2 ingredients and add to a large bowl. Drain tomatoes and add along with the next 6 ingredients and mix well.

Step 2

Spread the chicken mixture evenly over the tortillas.

Step 3

Roll each tortilla up tightly to form a cylinder. Wrap each roll in plastic wrap and store in a zipper bag.

Step 4

Slice each chilled tortilla cylinder into desired sizes (tip: a serrated knife works well).

Step 5

Cook Spanish rice per package instructions. Serve pinwheels with rice and chips and salsa.
