Step 1

In a medium mixing bowl, whisk together flour, baking soda, cinnamon, and salt. Set aside.

Step 2

In a large mixing bowl, combine mashed bananas, sweetener, eggs, oil/butter, apple cider vinegar, and extract, if using. Whisk together well.

Step 3

Add dry ingredients to wet ingredients and stir just until combined. Fold in any optional add-ins.

Step 4

Scoop batter into paper-lined muffin cups. Bake in 350 degree preheated oven for 14 - 16 minutes or until toothpick comes out clean when inserted in middle of muffin. Enjoy warm or cooled!
