Pebre is a Chilean salsa and is most commonly used on bread. It is also used on meats or anything else you desire. My favorite way to use it is on barbecued tri-tip. You can vary the ingredients to suit your taste.

Chilean Pebre Sauce

Roma tomatoes, quartered

cilantro

scallions, chopped

garlic

red wine vinegar

chile-garlic sauce (such as Huy Fong Foods®)

olive oil

garlic salt

Combine tomatoes, cilantro, scallions, garlic, red wine vinegar, chile-garlic sauce, olive oil, and garlic salt in a food processor or blender; process to the desired consistency. Refrigerate for 2 hours to let the flavors blend.


You can also add chunks of pineapple for sweetness This sauce is one of the great things about Chilean rustic cusine.

I made this for a Chilean friend who was coming out of the hospital and liked the little tastes  so much that i made a batch for our family. The chili-garlic sauce gives it a real kick, and the flavors bled so beautifully that my whole family raved about it. I have had it now on bread, in  a sandwich, and on the side with chicken. This is better than most of what you can buy at the store.

Absolutely fantastic. Made it as is and the family loved it. Served it on sour dough french bread toasted in a pan with butter.

Outstanding!  I will make this instead of salsa from now on!  My husband and son stood there eating it with spoons before I had a chance to put it in containers.  I added a bit more salt.
