Vegetarian Chili:Heat oil in saucepan set over medium heat; cook onion, red pepper, jalapeño, garlic, chili powder, and cumin for 5-8 minutes or until softened.Stir in beans, tomatoes, salt and pepper; bring to boil. Reduce heat to medium-low; simmer for 20-25 minutes or until thickened.

Grilled Cheese Sandwich:Heat large skillet set over medium heat. Butter one side of each slice of bread. Place one slice in skillet, butter side down. Layer with sliced cheese and second slice of bread butter side up.Cook for 2-3 minutes on each side or until golden brown and cheese is melted.Top each sandwich with chili. Spoon dollop of sour cream over top; garnish with fresh cilantro or extra cheeseTip: This sandwich is also delicious topped with guacamole.
