Step 1

Heat the oil in a saucepan over a medium heat. Add the onion, capsicum and garlic, and cook, stirring for 3 minutes or until soft. Increase heat to high and add the mince. Cook, stirring for 3-4 minutes or until browned.

Step 2

Add the cumin and chilli powder. Cook, stirring, for 1 minute or until aromatic. Stir in the tomatoes, stock and tomato paste. Bring to boil over a high heat. Reduce heat to medium-low and simmer covered, stirring occasionally for 25 minutes.

Step 3

Add the vinegar and kidney beans and cook for 5 minutes uncovered or until heated through. Season with salt and pepper. Sprinkle with the coriander and serve with steamed rice and sour cream.
