Preheat the grill to high.

Cut the chicken thighs into quarters and finely slice the onions.

In a large bowl, mix the chicken and onions with the chipotle paste, garlic powder, oregano, ground cumin, olive oil, salt, and black pepper. Toss to coat evenly.

Spread the mixture evenly on a baking tray.
Step 5
Place under the grill on the top shelf and cook for 15-20 minutes, turning halfway, until the chicken is cooked through and slightly charred.
Step 6
