Step 1
Heat olive oil in a pan over medium high heat, add in onions & chicken. Cook until chicken is cooked through.
Step 2
Add in veggies, cook for 2-3 mins then add Mingle's Chipotle Taco Seasoning, tinned tomatoes and stock. Mix & simmer for 15 mins.
Step 3
To prepare your tacos, add chicken mixture to a tortilla and top with salad & salsa.
