Step 1
Preheat oven to 350 and prep your flax egg by mixing 2 tbsp of flaxseed meal with 4 tbsp of warm water. Set aside.
Step 2
In a large bowl, mash 3 ripe bananas, add maple syrup, almond milk, vegan butter, baking soda, salt, and vanilla. Mix until combined.
Step 3
Mix in flax egg and cocoa powder until smooth. Finally, add in flour and mix just until combined. Pour batter into 12 muffin cups.
Step 4
Bake for about 25 minutes & enjoy! Mix together optional icing and drizzle over muffins. Icing is not factored into nutritional content.
