For the strawberry: Pull off the green stem and insert a skewer in the spot where the stem was.  For the banana: Cut banana into 4 equal parts. Insert a popsicle stick. To melt the chocolate chips, microwave them in a bowl for 20 seconds. Remove from microwave and mix. Microwave and mix in 20 second intervals until 80% of the chocolate chips are melted. It will fully melt when you mix it again. Dip the strawberries/bananas in chocolate until fully covered on all sides.  Place on a tray with baking paper and place in the freezer for 30 minutes. Pour the Bob's Red Mill Buttermilk Pancake and Waffle Mix in a bowl. Add the water and mix with a fork until smooth. Heat oil in a pot on medium heat. Once the oil is hot, carefully dip the frozen fruit into the batter until it is well coated and then place into the hot oil. Fry until golden brown, which takes 1-2 minutes, then place on a paper-towel covered tray. Optional- to make the doughnuts even fluffier: dip the strawberries/bananas again in the pancake mix and fry a second time.
